The Central Milling and Elevator Company is numbered among one of the first mills in Logan, being a presence there since 1867. It replaced an earlier mill built by Chares O. Card. It was originally owned by Nels Peterson and operated by Niels Hansen. It became the largest of the mills built in the Cache Valley.

William Bowker Preston, a prominent Morman of the 19th century, figured substantially along with his partner L. H. Martineau and his own son, Lee Preston in the operating of Central Milling Co. in the first several decades of its existance.

The mill was rebuilt and converted to the new roller process in the late 1880's with John R. Burns as the first "roller mill" miller. His products were widely sought-after.

Central Mills was one of sixteen mills located in "Utah's granary" or the Cache Valley. Central Mills and Gilt Edge Mills are the only two left since 1956; and , Gilt Edge Mill has been incorporated into the Central Mills family since July, 2005.

The Deseret Mill was constructed in 1866-68 by Thomas E. Ricks of Logan and William Hendricks of Richmond. It was considered a very substantial mill building at that time, and later was well equipped with good machinery; consequently, it experienced a very good business. Niels M. Hansen was its first miller, staying there for more than twenty years. The mill was east of Central Mills about several hundred yards, near where Pioneer Street connects with S 200 East St. at the North Branch of Logan River today.

In 1917, Herbert R. Weston bought out the 50 shareholders that had founded the mill back in 1867. For over 80 years, the Weston family has carried on a fine tradition of milling grains through the 20th century. Several flours produced were Golden West, Red Rose, and also pancake flours. In 1997, Wheatland Seed, based in Brigham City and Giusto's Specialty Food out of San Francisco took over production, adding organic flours and products to the picture. Gilt Edge Mills of Richmond has also come into the organization since 2005.
